Currently I do 6- 7 routines per workout. I do 3 sets and 8 reps for each one. I'm hitting the gym 5 days a week on average, not counting martial art training and competions. I've maxed what I can lift and am inching up the weight. I also do cardio 5 nights a week. Does it make sense to keep increasing the weight, increase the sets or add a routine?

Just keep increasing the weight, but eventually you'll need to change the excercises you do.

Unless you are going for strictly hypertrophy, you should mix it up. Do compound lifts for strength in a 5x5 fashion & then add accessory exercises afterwards with hypertrophy in mind. That way you increase both the size and strength of your muscles.

It can help to take some of the weight off after your money sets and do one or two death sets.
