Housing prices are going way up in Las Vegas so that will make things more expensive but generally other things there are pretty reasonable. But Las Vegas generally isn't a good place to raise a family.
Have you visited Denver / Phoenix / Las Vegas / Salt Lake City? It would be worth it to spend a week or so in each city and get a feel. Get your list down to two cities and spend a little more time in each one. From there you will probably have a good idea where you want to be.
I'm in the Phoenix area and I love it here. Real estate is also going up here pretty fast too but generally the cost of living is pretty low here. Arizona often has among the cheapest gas prices in the US and grocery stores have great prices. Phoenix is also one of the most pro-veteran places I've ever been to in the US.
