You may or may not have a good idea of what you want to do with your life. If you already know, it is highly likely that this will change during your studies. Choose a major which will enable you to develop marketable skills upon graduation. I can't tell you which ones those are since I know nothing about your talents, interests, personality, location etc.
Also, why would you choose an easy major in order to focus on self improvement? Self improvement is a life long process. Does that mean that once you graduate and find yourself in a stressful job, your self improvement plan will stop? A busy man will always find time to hit the gym, read books, shag girls and so on. The people who get the most out of their studies are the ones who learn to manage their time properly in order to have a life outside of school, even if you are doing a "harder" major.
