At the end I think you recognized your own problem. You hopped in the passenger seat and hoped she would drive.
"Let me know if you still want me to come over..."
Translation: "Tell me when to come over so we can fuck."
At that point all you had to do was give her a time.

Only when you fail to lead them. She keeps asking because your answers are weak and passive. "I'm at the gym, but yeah come over" doesn't cut it in this pretext. That doesn't give her the information she needs to hear, and that's why she keeps asking.
Channel your inner Don: "Finishing up at the gym. Come over at noon."
This is a strong statement full of information. It lets her know that your Parents will be gone/Grandma will be asleep/Roommates will be at work, dog will be fed, etc, and you will be ready to see her.
IMO, you have to get in a leader's mindset i.e. nothing is going to happen unless you make it happen.
