I didn't really do anything non-touristy in Puebla. I went to Cholula to see the pyramid/church, but had no idea there was any nightlife there. I was staying near the Zocalo in Puebla and was there mid-week. It was really quiet at night. I had no idea what to really do for nightlife.
Unfortunately, nightlife (everything actually) is dead from Sunday-Wednesday. There are some restaurants and bars near the square but they aren't packed. If you return, check what events near taking place.
