Certainly not all, but many have been doing that as far as I know.
I wouldn't worry about the prices going up though. I don't really think the prices on islands changed all that much even with the bailout. When thinking about pricing and islands, the most important factors are 1) which island and 2) which period. Mykonos and Santorini for instance are crazy expensive compared to, say, Crete. And mid July to late August is high season, so accomodation is more expensive then.
If it won't matter in 30 years, it doesn't matter now.
