There are any number of ways this could have played out. Did they use the same book that they tested on (with prior damage reducing its structural integrity)? Did they use a different book with similar profile but differing paper quality? Was the bullet fired from the same position and angle? etc.
Stunt had nearly the intended effect as far as I can tell.
