You're best bet is screen caps of the texts.
Upload the caps to a few online storage sites.
Dropbox
Mega
One Drive (through microsoft email)
I'm assuming you want these texts for proof (rape defense) to be used at a later date?

You receive a text and you want to export it ?
Signal does that.
If it's the other way around I don't know.

Okay, I'm going per your headline here, your description is not exactly clear. If you want to convert between distinct text formats than I would recommend emacs or vi - those are command line editors. If you want to copy text into a text file and email it to you then all you have to do is to use a regular text editor, depending on your platform that would be TextEdit (OS X) or Notepad (Windooz). Make sure you use the .txt file extension.
FYI - it may be your email app that's giving you an issue. But that's outside the scope of this question. If you want a more thorough response then provide more details as to what you are doing.

I've got a long text convo (5000+ messages) on my phone and I want to convert it to a .txt file for reading/searching/cutting/pasting.
EDIT: Not worried about rape defence... this time

1. Do you mean SMS messages, in the default android SMS app?
2. In what way did the 5 apps you tried fail to work?
3. Have you tried using an SMS backup app?

Are you just telling us you're a techie, or do you really think a layman should use vi? And then immediately rip all his hair out in frustration?
