This is probably not acceptable for most of you, but one way to fight this is just to get sick a lot your first few months of travel, get your stomach used to the local bugs, and then experience fewer problems in the long run. I have occasional bad days from things I eat, but I no longer get full blown illness that inhibits me socially. Then again, Eastern Europe is cleaner than South/Central America.

The alcohol has nothing to do with helping you shit.
Its just another liquid.
beer is just water with some flavor...the brewing process or beer and distillation of liquor kills bacteria.
But im not trying to be drunk all day like a pirate on rum.

Alcohol, along with caffeine, are major gut irritants that you shouldn't drink when experiencing problems.
