Staying at my cushy job or take a more challenging job?

I got a job offer for a more challenging job for slightly bigger salary. My current job is pretty easy for me but I do enjoy it. I am also an engineer.
I was wonder if you guys would think it would be better to stay at my current job and spend more time on personal endeavors. I could focus on improving myself and find a side hustle.

You need to answer that yourself.
If you are really motivated to work on your personal endeavours and a side hustle (and that is a bigger priority to you) - stay in your current job.
Otherwise, if career progression and more immediate money are more important to you, take the new position/job.
You might need to ask yourself what your short term and long term life goals are (if you don't know them yet, now is a good time to start developing them), and consider them in your decision.

I have gone down the road of staying at a cushy job while building my side biz. There was a period of time where I considered trying to find another job but I don't think it's worth the energy.
However, if you haven't even started any kind of side gig then you should probably consider just taking the better paying job. If your job is cushy you should already be on the path and this should be an easy decision.

If the job is so easy I'm expecting that you do a great job at it. Why not ask for a raise and see if they'll pay you more?
I'm in the area as you, I plan on asking for a raise once I hit my 1-year mark.

I would say don’t undervalue the cushy aspect versus stress/long hours. There are other things to consider too, of course.
