I've had numerous frustrating dates like you've described. This is why I strictly adhere to tight logistics (either my place or a venue close by) unless I can screen the girl effectively beforehand. I also keep the time/$ investment low- and if things seem to be tanking, I'll bounce after 1 drink or just tell her to come home with me for the hell of it.
