One more major tip
In Plovdiv eat at Potomtzi (in english heirs) restaurant. It is on Mitropolit Paisii 6 street,in the Old town (just off Saborna street).
Typical local food. Once I found this place I basically ate there several times a day, every day until I left. The lamb and mushroom dish there is one of the best meals I have had this year easily and, even with 2 glasses of red wine (which they make themselves) the bill still only comes to about 4 dollars.
